Ingredients: 20 small to medium green tomatoes 4 bell peppers 1 large yellow onion 1 red pepper 2 chilli peppers 1 small cucumber 2 cloves of garlic 1 tablespoon plus 2 teaspoons of yellow mustard seed 1 tablespoon of celery seed 2 cups cider vinegar 2 cups sugar 1 tablespoon plus two teaspoons of kosher salt
I chop the veggies the day before and mix with two tablespoons of pickling salt to drain off the water and reduce cooking time. Chop everything up, mix it all together in a large pot and simmer for an hour to an hour and a half until desired thickness. You can substitute cucumbers if you got 'em... I just had some and it's tasty!!!
